3 Easy, Healthy, Indulgent Late Night Snack Recipes

What’s better than some snacks after a fun night out and before you climb into bed? Instead of your local halal man (hello, stomach pains!) or pizza (bleh), make these easy treats and stash them around the house. You’ll be so delighted when you find them in the wee hours of the morning, you might even squeal. 

Raw Brownies

Servings: 4


20 dates, pitted

¼ cup goji berries

¼ cup cacoa nibs

¼ cup pecan pieces

¼ cup sliced almonds

2 Tbsp cacao powder

¼ cup cold water

Instructions: In a food processor, pulse dates until paste-like. Add goji berries, cacao nibs, pecans, almonds and cacao powder. Process until smooth, adding cold water if necessary.

Spicy Nut Medley

Servings: 8

1 large egg white

1 tsp kosher salt

2 dash cayenne pepper

1 dash cumin

2 dash curry powder

1 dash Old Bay seasoning

¼ tsp red pepper flakes

1 dash ground white pepper

¼ lemon, juiced

1 cup raw pistachios, pecans, walnuts, peanuts or any nut of your choice

InstructionsPreheat oven to 350F. Whisk egg whites until white and frothy. Add all other ingredients except pistachios and whisk to combine. Gently toss with pistachios. Bake on parchment lined sheet tray for 10 minutes. Let it cool and harden 10 minutes before serving.

Garlic Butter Popcorn

Servings: 4

1 tsp grapeseed oil

½ cup popcorn corn kernels

Chili Garlic Butter

1 Tbsp butter or margarine

3 Tbsp hot sesame oil

¼ tsp garlic powder

1 tsp kosher salt

1 tsp maple syrup

InstructionsIn a small stock pot, combine all ingredients for chili garlic butter on medium heat and whisk to combine. In large rondeau or sauté pan, heat grapeseed oil on high until slick and shiny. Add corn kernels and cover. Reduce heat to medium. Let it pop until the pops slow down considerably. Turn off heat and drizzle chili garlic butter over popcorn. Toss to combine.
